Instructions
- Prepare the filling: In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Gently fold in the fresh raspberries.
- Form the bites: Using a small spoon or a melon baller, scoop out portions of the cream cheese mixture and form into small balls. Place the formed balls on a baking sheet lined with parchment paper.
- Chill: Place the baking sheet with the cream cheese balls in the freezer for about 1 hour, or until they are firm.
- Prepare the coating: In a shallow bowl, combine the graham cracker crumbs and melted butter, mixing until the crumbs are evenly coated.
- Coat the bites: Remove the firmed cream cheese balls from the freezer. Roll each ball in the graham cracker crumb mixture until fully coated. Place the coated bites back on the parchment-lined baking sheet.
- Chill again: Return the coated cream cheese bites to the freezer for another 30 minutes to firm up again.
- Serve: Allow the raspberry cream cheese bites to sit at room temperature for a few minutes before serving.
