Description

These delightful bites combine creamy, sweetened cream cheese with fresh raspberries, all coated in buttery graham cracker crumbs. Perfect for parties or a sweet snack!

Ingredients

Scale
  • 1 cup fresh raspberries
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted

Instructions

  • Prepare the filling: In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Gently fold in the fresh raspberries.
  • Form the bites: Using a small spoon or a melon baller, scoop out portions of the cream cheese mixture and form into small balls. Place the formed balls on a baking sheet lined with parchment paper.
  • Chill: Place the baking sheet with the cream cheese balls in the freezer for about 1 hour, or until they are firm.
  • Prepare the coating: In a shallow bowl, combine the graham cracker crumbs and melted butter, mixing until the crumbs are evenly coated.
  • Coat the bites: Remove the firmed cream cheese balls from the freezer. Roll each ball in the graham cracker crumb mixture until fully coated. Place the coated bites back on the parchment-lined baking sheet.
  • Chill again: Return the coated cream cheese bites to the freezer for another 30 minutes to firm up again.
  • Serve: Allow the raspberry cream cheese bites to sit at room temperature for a few minutes before serving.

Notes

  • For a sweeter taste, adjust the powdered sugar according to preference.
  • These bites can be frozen for later enjoyment; just thaw before serving.
