- 5 pounds Yukon Gold or white potatoes, peeled and cubed
- 1/3 cup chicken broth
- Salt (to taste)
- 1/2 cup unsalted butter
- 1/3 cup chopped fresh dill
- 1/3 cup chopped fresh parsley
- 1/4 cup chopped fresh chives
- 7–9 garlic cloves, minced
- 1 teaspoon sea salt (adjust to taste)
- Ground black pepper (to taste)
Instructions
- Preheat oven: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Prepare potatoes: Place cubed potatoes in a bowl and cover with cold water. Drain and rinse.
- Season potatoes: Place potatoes on the baking sheet. Pour chicken broth over the potatoes and season with salt.
- Bake: Cover the baking sheet tightly with foil. Bake for 35-40 minutes, or until potatoes are fork-tender.
- Make garlic butter: Melt butter in a saucepan. Add minced garlic and chopped herbs.
- Toss and serve: Once the potatoes are done, remove the foil and toss with garlic butter. Serve immediately.
