Description

These Herb and Garlic Baked Potatoes are a delicious and aromatic side dish that combines the creaminess of Yukon Gold potatoes with the rich flavors of garlic and fresh herbs. Perfect for family dinners or special occasions!


Ingredients

  • 5 pounds Yukon Gold or white potatoes, peeled and cubed
  • 1/3 cup chicken broth
  • Salt (to taste)
  • 1/2 cup unsalted butter
  • 1/3 cup chopped fresh dill
  • 1/3 cup chopped fresh parsley
  • 1/4 cup chopped fresh chives
  • 79 garlic cloves, minced
  • 1 teaspoon sea salt (adjust to taste)
  • Ground black pepper (to taste)

Instructions

  • Preheat oven: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Prepare potatoes: Place cubed potatoes in a bowl and cover with cold water. Drain and rinse.
  • Season potatoes: Place potatoes on the baking sheet. Pour chicken broth over the potatoes and season with salt.
  • Bake: Cover the baking sheet tightly with foil. Bake for 35-40 minutes, or until potatoes are fork-tender.
  • Make garlic butter: Melt butter in a saucepan. Add minced garlic and chopped herbs.
  • Toss and serve: Once the potatoes are done, remove the foil and toss with garlic butter. Serve immediately.
