Description

  • 1 tablespoon Dijon mustard
  • 1/2 cup breadcrumbs (panko or regular)
  • 1/4 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • Lemon wedges, for serving (optional)

Instructions

  • Prepare the Herb Mixture:

    • In a small bowl, mix olive oil, minced garlic, rosemary, thyme, Dijon mustard, salt, and pepper to form a paste.
  • Season the Lamb Chops:

    • Pat lamb chops dry. Rub the herb paste evenly over both sides and let sit for 15-20 minutes at room temperature.
  • Preheat the Oven:

    • Set the oven to 400°F (200°C).
  • Coat the Lamb Chops:

    • Mix breadcrumbs and Parmesan cheese. Press each lamb chop into this mixture, coating both sides.
  • Sear the Lamb Chops:

    • Heat a large oven-safe skillet over medium-high heat with a bit of olive oil. Sear lamb chops for 2-3 minutes on each side until golden brown.
  • Finish in the Oven:

    • Transfer the skillet to the preheated oven. Roast for 5-7 minutes for medium-rare or longer for more doneness.
  • Rest and Serve:

    • Let the lamb chops rest for 5 minutes before serving. Garnish with lemon wedges if desired.
