  • 1 cup cooked lobster meat, diced
  • 1 tablespoon butter
  • 1 teaspoon lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the lamb chops: Combine minced garlic, rosemary, thyme, salt, and pepper. Drizzle with olive oil and marinate for 15 minutes.
  2. Boil the potatoes: Cook potatoes in salted water for 12-15 minutes until fork-tender. Drain and mash with butter, milk, salt, and pepper until smooth. Set aside.
  3. Cook the lamb chops: Heat olive oil in a skillet over medium-high heat. Sear lamb chops for 3-4 minutes per side until browned. Add butter for basting. Let them rest.
  4. Prepare the asparagus: Toss asparagus with olive oil, salt, and pepper. Steam or roast for 5-7 minutes until tender but crisp.
  5. Optional lobster topping: Melt butter, sauté diced lobster for 2-3 minutes, then drizzle with lemon juice and garnish with parsley.
  6. Plate the dish: Serve lamb chops over mashed potatoes, add asparagus, and top with lobster if using. Garnish with parsley.
