- 1 cup cottage cheese
- 1/4 cup milk (plus more if needed)
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, pepper, thyme, basil, and garlic powder.
- Cut in cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Add cottage cheese and milk to the flour mixture. Stir gently until just combined. If too dry, add an extra tablespoon of milk.
- Turn dough out onto a lightly floured surface and gently knead a few times to bring it together.
- Pat dough to about 3/4-inch thickness and cut into rounds using a biscuit cutter or the rim of a glass.
- Place biscuits on the prepared baking sheet, slightly touching if you want soft sides, or spaced apart for crisper edges.
- Bake for 12–15 minutes or until golden brown. Let cool slightly and sprinkle with fresh parsley if desired. Serve warm!

- Use small curd cottage cheese for smoother texture in the biscuits.
- Biscuits are best eaten fresh but can be stored in an airtight container for up to 2 days or frozen for up to 1 month.
