  • 1/2 cup cold unsalted butter, cubed
  • 1 cup cottage cheese
  • 1/4 cup milk (plus more if needed)
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, pepper, thyme, basil, and garlic powder.
  3. Cut in cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Add cottage cheese and milk to the flour mixture. Stir gently until just combined. If too dry, add an extra tablespoon of milk.
  5. Turn dough out onto a lightly floured surface and gently knead a few times to bring it together.
  6. Pat dough to about 3/4-inch thickness and cut into rounds using a biscuit cutter or the rim of a glass.
  7. Place biscuits on the prepared baking sheet, slightly touching if you want soft sides, or spaced apart for crisper edges.
  8. Bake for 12–15 minutes or until golden brown. Let cool slightly and sprinkle with fresh parsley if desired. Serve warm!

  • Use small curd cottage cheese for smoother texture in the biscuits.
