Ingredients
Scale
- 2 large chicken breasts, boneless and skinless, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 packet Hidden Valley Ranch seasoning mix
- 1 cup ranch dressing (preferably Hidden Valley)
- 1 cup heavy cream
- 8 oz pasta (penne, rotini, or your choice)
- 1 cup shredded mozzarella cheese (optional for extra creaminess)
- Salt and pepper, to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and season with salt and pepper. Cook until the chicken is browned and fully cooked through, about 6-8 minutes.
- Sprinkle the Hidden Valley Ranch seasoning mix over the cooked chicken and stir to coat.
- Reduce the heat to low, then add the ranch dressing and heavy cream to the skillet. Stir everything together and bring to a simmer. Cook for 3-5 minutes, until the sauce is heated through and slightly thickened.
- Add the cooked pasta to the skillet and toss to coat the pasta in the creamy ranch sauce.
- If using, stir in the shredded mozzarella cheese and cook until melted and creamy.
- Taste and adjust seasoning with more salt, pepper, or ranch dressing if needed.
- Garnish with freshly chopped parsley, if desired, and serve hot.
Notes
- For extra flavor, you can add sautéed vegetables like bell peppers, spinach, or onions.
- You can use grilled chicken instead of cooked chicken pieces for added smokiness.
- To make this a lighter dish, substitute the heavy cream with half-and-half or use a lighter ranch dressing.
