Instructions

  1. In a high-speed blender, add the oats, cottage cheese, eggs, baking soda, honey, and cinnamon. Blend on high until smooth but avoid overmixing.
  2. If using optional add-ins like chocolate chips or blueberries, gently fold them into the batter after blending.
  3. Let the batter sit for about 15 minutes for fluffier pancakes.
  4. Heat avocado oil or butter in a large pan over medium-low heat.
  5. Pour 1-2 heaping tablespoons of batter into the pan for each pancake.
  6. Cook until bubbles form on top and the bottom is golden brown. Flip and cook the other side for 1-2 minutes.
  7. Repeat in batches, wiping out the pan between each to prevent burning.
