- 1/2 cup zucchini, diced
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- Salt and pepper, to taste
- 1 tablespoon olive oil (for greasing the pan)
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish with olive oil or cooking spray.
- In a large bowl, whisk together the cottage cheese, eggs, garlic powder, basil, oregano, salt, and pepper until smooth and well combined.
- Stir in the shredded cheddar cheese, grated Parmesan, and chopped vegetables (broccoli, bell peppers, onion, and zucchini).
- Pour the mixture into the prepared baking dish and spread it evenly with a spatula.
- Bake for 30-35 minutes, or until the top is golden brown and the center is set.
