For the Honey BBQ Chicken:

  • 1/4 cup honey

  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika

For the Creamy Garlic Parmesan Potatoes:

  • 1 1/2 lbs baby potatoes (or regular potatoes, cubed)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • Salt and pepper, to taste
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Prepare the Chicken:
    Preheat your oven to 375°F (190°C).
    In a small bowl, mix together honey, BBQ sauce, garlic powder, onion powder, smoked paprika, salt, and pepper.
    Heat olive oil in a large oven-safe skillet over medium-high heat. Season both sides of the chicken breasts with salt and pepper. Brown the chicken on both sides in the skillet for about 3-4 minutes per side.
    Once browned, pour the honey BBQ sauce over the chicken, making sure each piece is evenly coated. Transfer the skillet to the oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C). Baste the chicken with the sauce halfway through for extra flavor.
  2. Make the Creamy Garlic Parmesan Potatoes:
    While the chicken is baking, wash and cut the baby potatoes in half (or into quarters if using larger potatoes).
    In a large skillet, heat olive oil and butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
    Add the potatoes and cook for 8-10 minutes, stirring occasionally, until they are golden brown and tender.
    Lower the heat and add heavy cream, Parmesan cheese, and mozzarella cheese to the skillet. Stir to coat the potatoes evenly. Let the sauce simmer for 3-5 minutes until thickened. Season with salt and pepper to taste. Garnish with chopped parsley.
  3. Serve:
    Once the chicken is done baking, remove it from the oven. Serve the chicken alongside the creamy garlic Parmesan potatoes. Drizzle any extra BBQ sauce from the skillet over the chicken for added flavor.
