For the Casserole:

  • 1 lb ground beef

  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken soup)
  • 1/2 cup beef broth (or water)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese (divided)

Instructions

  1. Preheat the Oven:
    Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish or casserole dish.
  2. Cook the Ground Beef:
    In a large skillet, cook the ground beef over medium heat, breaking it up with a spoon as it cooks. Cook until browned and fully cooked through (about 6-8 minutes). Drain any excess fat.
  3. Add the Onion and Seasoning:
    Add the chopped onion to the skillet with the ground beef and cook for 2-3 minutes, until softened. Stir in garlic powder, onion powder, dried thyme, salt, and pepper. Remove from heat.
  4. Prepare the Casserole:
    In a large bowl, combine the cream of mushroom soup and beef broth (or water). Stir until smooth. Add the cooked ground beef and onions to the soup mixture, then stir in the frozen mixed vegetables.
  5. Assemble the Casserole:
    Layer the sliced potatoes evenly on the bottom of the prepared baking dish. Pour the beef mixture on top of the potatoes, spreading it out to cover evenly.
  6. Bake:
    Cover the casserole with aluminum foil and bake for 40-45 minutes, or until the potatoes are tender when pierced with a fork. Remove the foil and sprinkle 1 1/2 cups of shredded cheddar cheese on top. Return to the oven and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.
  7. Serve:
    Let the casserole cool for a few minutes before serving. Garnish with additional herbs or fresh parsley if desired.
