Description

This Homemade Buckeye Fudge brings together the irresistible combination of peanut butter and chocolate in a creamy, melt-in-your-mouth treat. Inspired by the classic Buckeye candy, this fudge is rich, smooth, and perfect for any occasion—especially holidays like Christmas or St. Patrick’s Day. With a quick and easy prep, it’s a dessert that everyone will love!

Ingredients

Scale

For the Peanut Butter Layer:

  • 1 cup peanut butter (creamy or crunchy)
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 1 1/2 cups graham cracker crumbs

For the Chocolate Layer:

  • 2 cups semisweet chocolate chips
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Make the Peanut Butter Layer:
In a medium bowl, combine the peanut butter, softened butter, and vanilla extract. Stir in the powdered sugar and graham cracker crumbs until fully combined and smooth.
  2. Prepare the Pan:
Line an 8×8-inch square baking dish with parchment paper or wax paper for easy removal later.
  3. Form the Peanut Butter Layer:
Press the peanut butter mixture into the bottom of the prepared baking dish, spreading it evenly to form a smooth layer.
  4. Make the Chocolate Layer:
In a medium saucepan, melt the semisweet chocolate chips and butter together over medium heat, stirring frequently. Once melted and smooth, remove from heat and stir in the vanilla extract.
  5. Assemble the Fudge:
Pour the melted chocolate mixture evenly over the peanut butter layer in the baking dish, spreading it with a spatula to cover the surface.
  6. Chill the Fudge:
Refrigerate the fudge for at least 2 hours, or until the fudge is fully set and firm to the touch.
  7. Serve:
Once set, cut the fudge into small squares and serve chilled or at room temperature.

Notes

  • You can add a pinch of sea salt on top of the chocolate layer before chilling for a salted touch.
  • For an even smoother peanut butter layer, you can use a food processor to blend the peanut butter and butter together before mixing in the sugar and graham cracker crumbs.
  • Store the fudge in an airtight container in the refrigerator for up to 2 weeks.
