Instructions
- Activate the Yeast: In a small bowl, dissolve the yeast in warm milk and let it sit for about 5 minutes until it becomes foamy.
- Prepare the Dough: In a large mixing bowl, combine the flour, sugar, and salt. Add the cold butter cubes and cut them into the flour mixture until it resembles coarse crumbs.
- Mix and Knead: Pour the yeast mixture, egg, and vanilla extract into the flour mixture. Mix until a soft dough forms, then knead on a floured surface for 5-7 minutes until smooth.
- Refrigerate the Dough: Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
- Roll and Fold: Roll out the dough into a large rectangle. Fold like a letter, roll out again, and repeat this folding process 3 times.
- Cut and Rise: Use a round cutter to cut out doughnut shapes and let them rise for 30 minutes under a cloth.
- Fry the Cronuts: Heat vegetable oil to 350°F (175°C) and fry the cronuts in small batches for 2-3 minutes on each side until golden brown. Drain on paper towels.
- Coat and Fill: Roll the warm cronuts in sugar, then fill with pastry cream or whipped cream using a piping bag.
