Instructions

  1. Make the Dough:
    • In a large bowl, combine the flour and salt.
    • Create a well in the center of the flour mixture, then crack the eggs into the well.
    • Use a fork to gently beat the eggs, then slowly incorporate the flour from the sides of the well until a dough starts to form.
  2. Knead the Dough:
    • Once the dough begins to come together, use your hands to knead it on a lightly floured surface for about 8-10 minutes until smooth and elastic.
    • If the dough is too dry, add water, a teaspoon at a time, until it comes together. If it’s too sticky, sprinkle with a little more flour.
    • Once the dough is smooth, cover it with a clean kitchen towel or plastic wrap and let it rest for 30 minutes. This step helps the dough relax and makes rolling it easier.
  3. Roll the Dough:
    • After the dough has rested, divide it into 2 equal pieces for easier handling.
    • Roll out each piece on a floured surface with a rolling pin until it’s very thin, about 1/8 inch thick. You can also use a pasta machine for this step if you have one, gradually rolling the dough through the machine to the desired thickness.
  4. Cut the Noodles:
    • Once the dough is rolled out, fold it loosely (like a letter or an accordion) and use a sharp knife to slice it into strips of your desired width, usually about 1/4 inch to 1/2 inch wide.
    • Unfold the strips and gently toss them with a little flour to prevent sticking.
  5. Cook the Noodles:
    • Bring a large pot of salted water to a boil.
    • Add the homemade egg noodles to the boiling water and cook for 2-4 minutes, depending on the thickness of the noodles. Fresh noodles cook much faster than dried pasta, so keep an eye on them. Once they float to the top and are tender, they’re ready to be drained.
  6. Serve:
