These Homemade Ground Chicken Sausage Patties are juicy, flavorful, and easy to make. Seasoned with herbs and spices, they’re a healthy alternative to pork sausage and perfect for breakfast sandwiches or served with eggs.


Ingredients

  • 1 lb ground chicken (preferably with some dark meat for juiciness)
  • 1 teaspoon fennel seeds (lightly crushed)
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes (optional for heat)
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon maple syrup (optional for a subtle sweetness)
  • 1 tablespoon olive oil or cooking spray (for frying)

Instructions

  1. In a large mixing bowl, combine all ingredients except olive oil. Mix gently until just combined—do not overmix.
  2. Form the mixture into 8 equal-sized patties, about 1/2-inch thick.
  3. Heat a large skillet over medium heat and add olive oil or spray with nonstick spray.
  4. Cook the patties in batches, 3–4 minutes per side, or until golden brown and the internal temperature reaches 165°F (74°C).
  5. Remove from pan and let rest for a few minutes before serving. Enjoy hot.

Notes

  • These patties can be made ahead and frozen raw or cooked. Place parchment paper between them for easy separation.
  • Use ground turkey instead of chicken for a similar result.
  • You can adjust the seasoning to make them sweeter (more maple syrup and cinnamon) or spicier (more red pepper flakes).
