For the Doughnuts:

  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1/2 cup warm milk (110°F/43°C)
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 3 1/2 cups all-purpose flour, plus extra for rolling
  • 1/2 cup water
  • Vegetable oil, for frying

For the Glaze:

  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Activate the Yeast: In a small bowl, combine the warm milk, sugar, and yeast. Stir gently and let it sit for about 5-10 minutes until frothy.
  2. Prepare the Dough: In a large mixing bowl, combine the flour and salt. Add the yeast mixture, melted butter, eggs, and vanilla extract. Mix until a dough forms. Knead the dough on a floured surface for about 5-7 minutes, until it becomes smooth and elastic.
  3. First Rise: Place the dough in a lightly greased bowl, cover with a clean towel, and let it rise for about 1-1.5 hours, or until doubled in size.
  4. Shape the Doughnuts: Punch down the dough and roll it out on a floured surface to about 1/2-inch thickness. Use a doughnut cutter to cut out doughnuts and holes. If you don’t have a doughnut cutter, you can use a round cookie cutter and a smaller cutter for the holes.
  5. Second Rise: Place the shaped doughnuts on a floured baking sheet, cover, and let them rise for an additional 30 minutes.
  6. Fry the Doughnuts: Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the doughnuts in batches, about 1-2 minutes per side, until golden brown. Use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain excess oil.
  7. Make the Glaze: In a medium bowl, whisk together the powdered sugar, milk, vanilla extract, and a pinch of salt until smooth.
  8. Glaze the Doughnuts: While the doughnuts are still warm, dip them into the glaze, making sure they are fully coated. Let any excess glaze drip off and place the doughnuts on a wire rack to set.

Notes
