Ingredients
-
For the pancakes (McGriddle buns):
-
1 cup all-purpose flour
-
1 tablespoon sugar
-
1 tablespoon baking powder
-
½ teaspoon salt
-
1 large egg
-
¾ cup milk
-
2 tablespoons unsalted butter, melted
-
1 teaspoon vanilla extract
-
2 tablespoons maple syrup (for the sweet flavor inside)
For the filling:
-
4 large eggs
-
4 slices cooked bacon
-
4 slices American cheese (or your favorite cheese)
-
Maple syrup (for drizzling)
-
Instructions
-
Make the pancakes (McGriddle buns):
-
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
-
In a separate bowl, beat the egg, then stir in the milk, melted butter, vanilla extract, and maple syrup.
-
Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; it’s okay if the batter is slightly lumpy.
-
-
Cook the pancakes:
-
Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
-
For each pancake, pour about 2–3 tablespoons of batter onto the skillet. Cook for about 2-3 minutes on one side until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
-
Continue cooking the pancakes in batches, keeping them warm in the oven.
-
-
Prepare the filling:
-
In a skillet over medium heat, cook the bacon slices until crispy and golden brown. Set aside.
-
In the same skillet, crack the eggs and cook to your preference (scrambled or fried). For fried eggs, cook until the whites are set but the yolks are still runny (or cook longer for a firmer yolk).
-
Set aside.
-
-
Assemble the McGriddles:
-
Place one pancake on a plate, then layer with a slice of cheese, followed by a crispy slice of bacon, and a cooked egg.
-
Top with another pancake, and drizzle with maple syrup for that signature McGriddle sweetness.
-
-
Serve and enjoy!
-
Serve immediately with extra maple syrup on the side if desired.
-
Notes
-
Sweetness: You can adjust the amount of maple syrup in the pancake batter to your preference. For a stronger maple flavor, add more syrup.
-
Egg Cooking Style: Feel free to adjust how you cook your eggs. You can also scramble them for a softer filling.
-
Make-Ahead: You can make the pancakes ahead of time and store them in the refrigerator. Just reheat in the microwave or a skillet before assembling.
-
Variations: Swap out the bacon for sausage patties or use a different type of cheese for variety.
