Description

Homemade Mexican Pizza is a crispy, cheesy delight layered with seasoned ground beef, refried beans, zesty enchilada sauce, and melty cheese, all stacked between golden flour tortillas. This DIY version tastes even better than takeout and is perfect for a fun, family-style dinner!


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 can (16 oz) refried beans
  • 1/2 cup enchilada sauce (or taco sauce)
  • 1 cup shredded Mexican blend cheese
  • 8 small flour tortillas (6-inch)
  • 1/4 cup chopped tomatoes
  • 2 tablespoons sliced black olives (optional)
  • 2 green onions, sliced
  • Vegetable oil for frying


Instructions

  1. In a skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat.
  2. Add taco seasoning and water. Simmer for 5–7 minutes until thickened. Set aside.
  3. In another skillet, lightly fry tortillas in a bit of oil until crispy and golden on both sides. Drain on paper towels.
  4. Warm the refried beans in a saucepan or microwave until spreadable.
  5. To assemble: Place one tortilla on a baking sheet. Spread with a layer of refried beans, then seasoned beef. Top with a second tortilla.
  6. Spoon enchilada sauce over the top and sprinkle generously with shredded cheese.
  7. Repeat for all pizzas (makes 4 total). Bake at 400°F (200°C) for 8–10 minutes or until cheese is melted and bubbly.
  8. Remove from oven and top with chopped tomatoes, olives, and green onions. Slice and serve hot!
