  • 1/2 teaspoon vanilla extract

  • 1/4 teaspoon food coloring (optional)
  • Cornstarch, for dusting

Instructions

  1. In a medium saucepan, combine the sugar, corn syrup, water, and salt. Stir over medium heat until the sugar has dissolved.
  2. Once the sugar has dissolved, bring the mixture to a boil, and let it cook without stirring until the temperature reaches 250°F (hard ball stage) on a candy thermometer.
  3. Remove the saucepan from the heat and stir in the butter, vanilla extract, and any flavored extract and food coloring, if desired. Mix well to combine.
  4. Carefully pour the hot candy mixture onto a heatproof surface, like a marble countertop or baking sheet dusted with cornstarch.
  5. Let the mixture cool for a few minutes until it’s safe to handle. Once cooled slightly, butter your hands and begin pulling the taffy. Stretch and fold the taffy until it becomes light and airy, about 10-15 minutes of pulling.
  6. Once the taffy becomes light in color and texture, roll it out into a long rope about 1/2 inch in diameter.
  7. Using kitchen scissors, cut the taffy into small pieces (about 1 inch long), and wrap each piece in wax paper or cellophane.
