Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
- In a medium bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt until well combined.
- In a separate large bowl, cream together the softened butter and honey until light and fluffy, about 2-3 minutes.
- Add the egg, buttermilk, and vanilla extract to the butter mixture and beat until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Drop spoonfuls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the cookies are golden on the edges and a toothpick inserted into the center comes out clean.
- Remove from the oven and brush the warm cookies with melted butter.
- If desired, drizzle with additional honey for an extra touch of sweetness. Let cool on a wire rack.
Notes
- If you don’t have buttermilk, you can substitute it with regular milk or make a quick buttermilk substitute by adding 1 tablespoon of lemon juice or vinegar to a measuring cup, then filling it with milk up to 1/4 cup. Let it sit for 5 minutes before using.
- For a slightly crunchy texture, you can sprinkle a little coarse sugar on top of the cookies before baking.
