Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a medium bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt until well combined.
  3. In a separate large bowl, cream together the softened butter and honey until light and fluffy, about 2-3 minutes.
  4. Add the egg, buttermilk, and vanilla extract to the butter mixture and beat until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Drop spoonfuls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the cookies are golden on the edges and a toothpick inserted into the center comes out clean.
  8. Remove from the oven and brush the warm cookies with melted butter.
  9. If desired, drizzle with additional honey for an extra touch of sweetness. Let cool on a wire rack.

Notes

  • If you don’t have buttermilk, you can substitute it with regular milk or make a quick buttermilk substitute by adding 1 tablespoon of lemon juice or vinegar to a measuring cup, then filling it with milk up to 1/4 cup. Let it sit for 5 minutes before using.
  • For a slightly crunchy texture, you can sprinkle a little coarse sugar on top of the cookies before baking.
