Instructions

  • Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Place a rack in the middle and lightly grease a roasting pan or large baking dish.
  • Prepare the Chicken:
    • Pat the chicken dry with paper towels. Season the inside cavity with salt and pepper. Stuff the cavity with lemon quarters and a few sprigs of rosemary and thyme if desired.
