Description
A quick and easy meal with tender chicken, roasted vegetables, and a sweet and tangy honey mustard sauce, all baked in foil packets for an effortless cleanup and delicious flavor.

- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons Dijon mustard
- 2 tablespoons honey
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 cup baby potatoes, halved
- 1 cup carrots, sliced
- 1 cup bell pepper, sliced
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Cut four pieces of aluminum foil, large enough to wrap each chicken breast and vegetables.
- In a small bowl, whisk together the olive oil, Dijon mustard, honey, apple cider vinegar, garlic powder, onion powder, thyme, salt, and pepper.
- Place the chicken breasts in the center of each foil piece. Drizzle with the honey mustard sauce, making sure each chicken breast is evenly coated.
- On each foil packet, add the halved baby potatoes, sliced carrots, and bell pepper around the chicken. Drizzle with a little extra olive oil and season with additional salt and pepper if desired.
- Fold the sides of the foil over the chicken and vegetables to form a sealed packet.
- Place the foil packets on a baking sheet and bake for 25–30 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the vegetables are tender.
- Carefully open the foil packets and garnish with fresh parsley before serving.
Notes
- You can customize the vegetables in this dish by adding zucchini, sweet potatoes, or onions.
- For a quicker meal, use pre-cut vegetables or even frozen vegetable medleys.
- This recipe can also be cooked on the grill instead of in the oven. Just place the foil packets on the grill and cook over medium heat for 20–25 minutes.
