Description

A quick and easy meal with tender chicken, roasted vegetables, and a sweet and tangy honey mustard sauce, all baked in foil packets for an effortless cleanup and delicious flavor.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 cup baby potatoes, halved
  • 1 cup carrots, sliced
  • 1 cup bell pepper, sliced
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Cut four pieces of aluminum foil, large enough to wrap each chicken breast and vegetables.
  2. In a small bowl, whisk together the olive oil, Dijon mustard, honey, apple cider vinegar, garlic powder, onion powder, thyme, salt, and pepper.
  3. Place the chicken breasts in the center of each foil piece. Drizzle with the honey mustard sauce, making sure each chicken breast is evenly coated.
  4. On each foil packet, add the halved baby potatoes, sliced carrots, and bell pepper around the chicken. Drizzle with a little extra olive oil and season with additional salt and pepper if desired.
  5. Fold the sides of the foil over the chicken and vegetables to form a sealed packet.
  6. Place the foil packets on a baking sheet and bake for 25–30 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the vegetables are tender.
  7. Carefully open the foil packets and garnish with fresh parsley before serving.

Notes

  • You can customize the vegetables in this dish by adding zucchini, sweet potatoes, or onions.
  • For a quicker meal, use pre-cut vegetables or even frozen vegetable medleys.
  • This recipe can also be cooked on the grill instead of in the oven. Just place the foil packets on the grill and cook over medium heat for 20–25 minutes.
