  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard

  • 1 teaspoon dried thyme
  • 2 cups baby potatoes, halved
  • 2 cups carrots, sliced
  • 1 cup broccoli florets
  • 1 tablespoon olive oil (for vegetables)

Instructions

  1. Prepare the Honey Mustard Glaze:
    • In a small bowl, mix together honey, Dijon mustard, olive oil, apple cider vinegar, garlic powder, thyme, salt, and pepper. Whisk until smooth.
  2. Glaze the Chicken:
    • Preheat the oven to 400°F (200°C).
    • Place the chicken breasts on a baking sheet lined with parchment paper. Brush each chicken breast generously with the honey mustard glaze.
  3. Roast the Vegetables:
    • In a separate bowl, toss the baby potatoes, carrots, and broccoli with olive oil, salt, and pepper. Spread the vegetables on a baking sheet in a single layer.
    • Roast the vegetables for about 25-30 minutes or until tender and slightly browned, stirring halfway through.
  4. Bake the Chicken:
    • While the vegetables are roasting, bake the glazed chicken in the preheated oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is fully cooked.
  5. Serve:
    • Once the chicken and vegetables are done, serve the chicken breasts with the roasted vegetables on the side. Optionally, drizzle some extra honey mustard glaze over the chicken before serving.
