Description

This Honey Pineapple Jalapeño Salmon is a deliciously vibrant dish that combines sweet pineapple, spicy jalapeños, and tender salmon fillets. The marinade infuses the fish with a burst of flavor, making it perfect for summer grilling or a quick weeknight dinner.

Ingredients

Scale

For the Salmon:

  • 4 salmon fillets (about 6 oz each)
  • 1/2 cup fresh pineapple, diced
  • 12 jalapeños, seeded and finely chopped (adjust based on spice preference)
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish (optional)

Instructions

  • Prepare the Marinade:
    • In a small bowl, whisk together honey, soy sauce, lime juice, minced garlic, olive oil, and a pinch of salt and pepper.
    • Add the diced pineapple and chopped jalapeños, mixing well.
  • Marinate the Salmon:
    • Place the salmon fillets in a shallow dish or resealable plastic bag.
    • Pour half of the marinade over the salmon, reserving the other half for basting.
    • Let the salmon marinate in the fridge for 15-30 minutes.
  • Cook the Salmon:
    • Preheat your grill or a large skillet over medium heat.
    • Remove the salmon from the marinade and grill or pan-sear each fillet for 4-5 minutes per side, or until the salmon is cooked through and flakes easily with a fork.
  • Baste and Serve:
    • While cooking, baste the salmon with the reserved marinade for extra flavor.
    • Once cooked, garnish with fresh cilantro if desired.
  • Serve and Enjoy:
    • Serve the honey pineapple jalapeño salmon with your favorite sides, such as rice, grilled vegetables, or a fresh salad.

Notes

  • Adjust the jalapeño quantity based on your spice preference.
  • For extra flavor, try adding ginger to the marinade.
