- 2 lbs. carrots, peeled and cut into 2-inch chunks
- 2 tablespoons extra virgin olive oil
- ½ teaspoon kosher salt
- ¼ teaspoon fresh ground black pepper
- 3 tablespoons butter
- 3 tablespoons honey
- ⅛ teaspoon cayenne pepper
- ½ tablespoon fresh thyme or fresh parsley
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the carrot chunks with olive oil, salt, and pepper.
- Spread the carrots evenly on a large baking sheet lined with parchment paper.
- Roast the carrots for 20 minutes or until they are fork-tender.
- While the carrots are roasting, melt the butter in a large saucepan over medium-low heat. Stir in the honey and cayenne pepper, allowing the mixture to cook for several minutes.
- Once the carrots are done roasting, transfer them to the saucepan with the honey butter mixture and stir to coat evenly.
- Garnish with fresh thyme or parsley and adjust seasoning if needed. Serve warm.
