Description

Ingredients

  • 2 lbs. carrots, peeled and cut into 2-inch chunks
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon fresh ground black pepper
  • 3 tablespoons butter
  • 3 tablespoons honey
  • ⅛ teaspoon cayenne pepper
  • ½ tablespoon fresh thyme or fresh parsley

Instructions

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, toss the carrot chunks with olive oil, salt, and pepper.
  • Spread the carrots evenly on a large baking sheet lined with parchment paper.
  • Roast the carrots for 20 minutes or until they are fork-tender.
  • While the carrots are roasting, melt the butter in a large saucepan over medium-low heat. Stir in the honey and cayenne pepper, allowing the mixture to cook for several minutes.
  • Once the carrots are done roasting, transfer them to the saucepan with the honey butter mixture and stir to coat evenly.
  • Garnish with fresh thyme or parsley and adjust seasoning if needed. Serve warm.
