Description
Honey Roasted Parsnips are a delightful side dish that balances sweetness and savoriness. Roasted to perfection, these parsnips become golden brown and tender with a touch of honey and fresh thyme, making them a versatile accompaniment to any meal.
Ingredients
Scale
- 1 1/2 lbs parsnips, peeled and cut into batons (about 2–3 inches long)
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 tablespoon fresh lemon juice
- 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- Prepare the parsnips: In a large bowl, toss the peeled and cut parsnips with olive oil, honey, lemon juice, thyme, salt, and pepper. Ensure the parsnips are evenly coated.
- Roast the parsnips: Spread the parsnips in a single layer on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, or until the parsnips are golden brown and tender, stirring halfway through to ensure even cooking.
- Serve: Remove the Honey Roasted Parsnips from the oven and transfer them to a serving dish. Garnish with freshly chopped parsley if desired.
Notes
- Ensure the parsnips are cut into uniform sizes for even cooking.
- Patting the parsnips dry after peeling can help achieve a crispier texture.
