Horiatiki Pasta Salad is a Mediterranean twist on the classic Greek Horiatiki salad, featuring al dente pasta, fresh vegetables, Kalamata olives, feta cheese, and a zesty olive oil dressing. It’s perfect for summer picnics, BBQs, or as a light meal on its own!

- 2 cups cooked pasta (penne, fusilli, or rotini)
- 1 cucumber, diced
- 1 pint cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup feta cheese, crumbled (optional for a vegan version)
- 2 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- 1 tbsp lemon juice
- 1 tsp dried oregano
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Cook the pasta according to package instructions, drain, and set aside to cool slightly.
- In a large mixing bowl, combine the cooled pasta, cucumber, cherry tomatoes, red onion, and Kalamata olives.
- Drizzle with olive oil, red wine vinegar, and lemon juice.
- Sprinkle with dried oregano, salt, and pepper. Toss gently to combine.
- Add crumbled feta cheese on top (if using).
- Chill in the fridge for at least 30 minutes to allow the flavors to meld.
- Serve chilled as a refreshing Mediterranean side dish or light meal.
