Description

For the Base:

  • 1 1/2 cups crushed digestive biscuits (or graham crackers)
  • 1 cup desiccated coconut
  • 1/2 cup cocoa powder
  • 1/2 cup unsalted butter, melted
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon vanilla extract

For the Marshmallow Topping:

  • 1 cup mini marshmallows
  • 1 tablespoon unsalted butter

For the Chocolate Glaze:

 

  • 4 oz dark chocolate, chopped
  • 2 tablespoons heavy cream

Instructions

  1. Prepare the base:

    • In a large mixing bowl, combine the crushed biscuits, desiccated coconut, and cocoa powder.
    • Add the melted butter, sweetened condensed milk, and vanilla extract to the dry ingredients. Stir until everything is well combined.
  2. Press the base into a pan:

    • Line a 9-inch square baking pan with parchment paper.
    • Press the mixture evenly into the base of the pan. Use the back of a spoon to smooth it out and compact it.
    • Place the pan in the fridge to chill for at least 1 hour or until the base is firm.
  3. Prepare the marshmallow topping:

    • In a small saucepan over low heat, melt the butter. Once melted, add the mini marshmallows and stir until they’re completely melted and smooth.
    • Remove from heat and allow the marshmallow mixture to cool for a few minutes, then spread it evenly over the chilled base.
  4. Prepare the chocolate glaze:

    • In a microwave-safe bowl, heat the dark chocolate and heavy cream in 20-second intervals, stirring between each, until the chocolate is completely melted and smooth.
    • Pour the melted chocolate over the marshmallow topping and spread it evenly with a spatula.
  5. Chill the slice:

    • Place the pan back in the fridge and let the slice chill for at least 2 hours or until fully set.
  6. Serve and enjoy:

Notes

  • You can use milk chocolate or white chocolate instead of dark chocolate for the glaze, depending on your preference.
