Description

Louisiana Voodoo Fries are crispy baked russet potatoes seasoned with bold Cajun spices, then topped with creamy cheese sauce and ranch dressing. A flavorful, spicy twist on loaded fries that’s perfect as a snack, appetizer, or party favorite.

  • 6 medium russet potatoes
  • 2 tablespoon extra virgin olive oil
  • 12 tbsp Cajun seasoning
  • ¼ cup creamy ranch dressing (plus extra for dipping)
  • 2 tablespoon butter
  • 2 tablespoon flour
  • ⅔ cup milk
  • 2 cups shredded cheddar cheese

Instructions

  1. Wash, scrub, and pat dry the potatoes. Peel them, then cut into thick fries (¾ inch by 3 inches).
  2. Bring 1 quart of water to a simmer with 3 tablespoons of salt.
  3. Place potatoes in a basket or colander over the simmering water, cover, and steam for 10–12 minutes until just tender. Do not overcook.
  4. Transfer steamed potatoes to a bowl, drizzle with olive oil, and toss gently to coat evenly.
  5. Arrange the potatoes in a single layer on a nonstick baking sheet.
  6. Bake at 450°F for 10 minutes, rotate the pan, and bake for another 5–10 minutes until golden and crisp.
  7. Meanwhile, make the cheese sauce. In a saucepan over medium heat, melt butter, whisk in flour and milk until smooth. Stir in shredded cheddar cheese until melted and creamy.
  8. Remove fries from the oven, sprinkle Cajun seasoning evenly, and toss gently to coat.
  9. Drizzle fries with ranch dressing and about ¼ cup of cheese sauce.
  10. Serve immediately with extra ranch and cheese sauce for dipping.
