  • 1/4 cup shredded coconut (optional)
  • 1/4 cup buttermilk (or regular milk)
  • 1 cup cream cheese (softened)
  • 1/4 cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk (for desired frosting consistency)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  3. In another bowl, mix together mashed bananas, crushed pineapple, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth and combined.
  4. Gradually fold the wet ingredients into the dry ingredients. Stir in chopped pecans and shredded coconut, if using.
  5. Pour the batter into the prepared loaf pan and spread evenly.
  6. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. While the bread cools, prepare the cream cheese frosting: Beat together the softened cream cheese and butter until smooth and creamy.
  9. Gradually add powdered sugar and vanilla extract. Add milk one tablespoon at a time until the frosting reaches your desired consistency.
  10. Once the bread has cooled, spread the cream cheese frosting on top of the bread. Slice and serve.

  • For extra flavor, you can add a teaspoon of ground nutmeg or allspice to the bread batter.
