- 1/2 cup packed brown sugar
- 2 large eggs
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup chopped pecans (optional)
- 1/4 cup shredded coconut (optional)
- 1/4 cup buttermilk (or regular milk)
- 1 cup cream cheese (softened)
- 1/4 cup unsalted butter (softened)
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1–2 tablespoons milk (for desired frosting consistency)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
- In another bowl, mix together mashed bananas, crushed pineapple, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth and combined.
- Gradually fold the wet ingredients into the dry ingredients. Stir in chopped pecans and shredded coconut, if using.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- While the bread cools, prepare the cream cheese frosting: Beat together the softened cream cheese and butter until smooth and creamy.
- Gradually add powdered sugar and vanilla extract. Add milk one tablespoon at a time until the frosting reaches your desired consistency.
- Once the bread has cooled, spread the cream cheese frosting on top of the bread. Slice and serve.
Notes
- For extra flavor, you can add a teaspoon of ground nutmeg or allspice to the bread batter.
- Store any leftover bread in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
