Description

  • 1 (8½-ounce) box Jiffy corn muffin mix

Instructions

  • Preheat the Oven:
    Preheat your oven to 350°F (175°C). Lightly grease a 2-quart casserole dish with butter or nonstick cooking spray to ensure the soufflé doesn’t stick.
  • Combine Ingredients:
    In a large mixing bowl, combine the drained whole kernel corn, cream-style corn, beaten egg, melted butter, sour cream, and Jiffy corn muffin mix. Mix until well combined and smooth.
  • Pour into Casserole Dish:
    Pour the mixture evenly into the prepared casserole dish. Use a spatula to smooth the top and ensure it is evenly distributed.
  • Bake:
    Bake for 45–55 minutes, or until the soufflé is set but still soft and slightly jiggly in the center. If using a shallow dish, check for doneness closer to 45 minutes. The top should be golden and slightly crispy.
  • Rest and Serve:
    Once the soufflé is done baking, let it rest for 10 minutes before serving. This allows the soufflé to firm up slightly and makes it easier to serve. Enjoy!

  • For a more indulgent version, add a cup of shredded cheese (cheddar or a cheese blend) to the mixture for a cheesy twist.
