Ingredients

Scale

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup Coca Cola
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour

For the topping (optional):

  • 1/2 cup Coca Cola (for the syrup)
  • 1/4 cup granulated sugar

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until fully mixed.
  3. Press the mixture into the bottom of the springform pan to create the crust. Bake for 10 minutes, then remove from the oven and let it cool while you prepare the filling.
  4. In a large bowl, beat the cream cheese with a hand mixer or stand mixer until smooth and creamy.
  5. Add the sugar and continue beating until fully combined.
  6. Mix in the Coca Cola, eggs, vanilla extract, and flour, and beat until smooth and well combined.
  7. Pour the cheesecake batter over the cooled crust in the springform pan.
  8. Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
  9. Let the cheesecake cool in the pan for 10 minutes, then remove from the springform pan and cool completely at room temperature.
  10. Refrigerate the cheesecake for at least 4 hours or overnight to allow it to set.
  11. Optional topping: In a small saucepan, combine the 1/2 cup Coca Cola and sugar. Bring to a simmer over medium heat and cook for about 5 minutes until it thickens into a syrup. Let cool and drizzle over the chilled cheesecake before serving.
  12. Slice and serve this Coca Cola-inspired cheesecake for a unique treat!

Notes

  • For a stronger Coca Cola flavor, you can increase the amount of Coca Cola in the filling, but be sure to adjust the sweetness accordingly.
  • You can use a graham cracker crust mix for a quicker version of the crust.
  • If you don’t want the topping syrup, this cheesecake is delicious as is.
  • For a fun twist, garnish with chocolate shavings or whipped cream.
