Description

Instructions

  • Prepare Raspberry Preserves: Warm the raspberry preserves slightly and strain to remove the seeds. Allow it to cool.
  • Melt the Dark Chocolate: In a heat-proof bowl, melt the dark chocolate and heavy cream over a pot of simmering water, stirring until smooth. Remove from heat and mix in the cooled raspberry preserves.
  • Chill the Mixture: Place the mixture in the refrigerator and chill until firm, about 1 hour.
  • Shape the Truffles: Once the mixture has chilled, scoop out teaspoon-sized amounts and roll them into balls. Arrange on a baking sheet lined with parchment paper and freeze for 30 minutes.
  • Melt the White Chocolate: In a microwave-safe bowl, melt the white chocolate and shortening together in 20-second intervals, stirring until smooth.
  • Coat the Truffles: Using a fork, dip each frozen truffle into the melted white chocolate, ensuring they are fully coated. Let any excess chocolate drip off before returning them to the parchment paper.
  • Drizzle with Caramel: Once coated, drizzle the truffles with caramel sauce and dust with freeze-dried raspberry powder. Chill until set.
