Description

This traditional Irish Apple Cake is a warm, spiced dessert filled with tender apples and a deliciously crumbly texture. It’s the perfect dessert for a cozy day, especially when served with a dollop of whipped cream or custard.

Ingredients

Scale

For the Cake:

  • 4 medium apples, peeled, cored, and chopped
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup buttermilk
  • 1 teaspoon vanilla extract

For the Topping (Optional):

  • ¼ cup brown sugar
  • 1 tablespoon unsalted butter, cut into small pieces
  • Powdered sugar for dusting (optional)

Instructions

  1. Prepare the Oven and Pan:
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

  2. Mix the Dry Ingredients:
In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.

  3. Cream Butter and Sugar:
In another bowl, cream together the butter and granulated sugar until light and fluffy, about 3-4 minutes. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

  4. Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined.

  5. Add Apples:
Gently fold in the chopped apples until evenly distributed throughout the batter.

  6. Transfer to Pan and Add Topping (Optional):
Pour the batter into the prepared cake pan. If desired, sprinkle the top with brown sugar and dot with small pieces of butter for a sweet, caramelized topping.

  7. Bake the Cake:
Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

  8. Serve:
Dust the cooled cake with powdered sugar (optional) and serve. Enjoy with whipped cream or custard if desired.
