- 2 cups whole wheat flour
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 ¾ cups buttermilk (or regular milk with 1 tablespoon lemon juice)
- 1 tablespoon honey or brown sugar (optional, for slight sweetness)
Instructions
- Preheat the oven to 425°F (220°C). Grease a 9-inch round cake pan or line with parchment paper.
- In a large mixing bowl, combine the whole wheat flour, all-purpose flour, baking soda, and salt.
- Make a well in the center of the dry ingredients and pour in the buttermilk (and honey or brown sugar, if using). Stir until the dough comes together and forms a sticky mass.
- Turn the dough out onto a lightly floured surface and gently knead it just until it forms a rough ball. Be careful not to overwork the dough.
- Shape the dough into a round loaf and place it in the prepared cake pan.
- Use a sharp knife to score an “X” shape on the top of the dough. This helps the bread cook evenly.
- Bake for 35-40 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
- Remove from the oven and let the bread cool on a wire rack before slicing.
Notes
- For a more rustic crust, you can bake the bread on a baking sheet instead of in a pan.
- If you don’t have buttermilk, you can use regular milk with a tablespoon of lemon juice or vinegar to create a similar effect.
- For added flavor, you can stir in ½ cup of rolled oats or seeds into the dough before baking.
