Ingredients
Scale
- 2 cups All-Purpose Flour
- 1/4 cup Granulated Sugar
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 3 tbsp Unsalted Butter, cold and cubed
- 1 cup Buttermilk
- 1 large Egg
- 1/2 cup Raisins (optional, but traditional for Irish soda bread)
- 1 tbsp Lemon Juice or Vinegar (to sour the milk, if you don’t have buttermilk)
Instructions
- Preheat the Oven and Prepare Muffin Tin:
- Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin with paper liners.
- Mix the Dry Ingredients:
- In a large bowl, whisk together the flour, sugar, baking soda, and salt until well combined.
- Cut in the Butter:
- Add the cold, cubed butter to the dry ingredients. Use a pastry cutter, two forks, or your hands to cut the butter into the flour mixture until it resembles coarse crumbs.
- Add Wet Ingredients:
- In a separate bowl, whisk together the buttermilk and egg.
- Pour the wet ingredients into the dry mixture and stir gently with a spoon or spatula just until combined. Be careful not to overmix—the dough should be somewhat lumpy.
- Fold in Raisins:
- If you’re using raisins, fold them into the batter gently.
- Scoop the Batter into Muffin Tin:
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Bake the Muffins:
- Bake in the preheated oven for 18-20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Cool and Serve:
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Serve warm with butter, jam, or enjoy them as they are!
Notes
- If you don’t have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk. Let it sit for 5 minutes before using.
- Raisins are optional, but they are a traditional addition to Irish soda bread. You can also try adding currants or chopped dried fruit for a different twist.
- For a slightly richer muffin, you can substitute half-and-half or cream for the buttermilk, though the texture will be a little different.
