Description

These Irish Soda Bread Muffins are a simple, delightful twist on the classic Irish soda bread! With a soft and slightly crumbly texture, a touch of sweetness, and the tang of buttermilk, these muffins are perfect for St. Patrick’s Day or any time you crave a traditional Irish treat. They’re easy to make and even easier to enjoy.

Ingredients

Scale
  • 2 cups All-Purpose Flour
  • 1/4 cup Granulated Sugar
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 3 tbsp Unsalted Butter, cold and cubed
  • 1 cup Buttermilk
  • 1 large Egg
  • 1/2 cup Raisins (optional, but traditional for Irish soda bread)
  • 1 tbsp Lemon Juice or Vinegar (to sour the milk, if you don’t have buttermilk)

Instructions

  1. Preheat the Oven and Prepare Muffin Tin:
    • Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin with paper liners.
  2. Mix the Dry Ingredients:
    • In a large bowl, whisk together the flour, sugar, baking soda, and salt until well combined.
  3. Cut in the Butter:
    • Add the cold, cubed butter to the dry ingredients. Use a pastry cutter, two forks, or your hands to cut the butter into the flour mixture until it resembles coarse crumbs.
  4. Add Wet Ingredients:
    • In a separate bowl, whisk together the buttermilk and egg.
    • Pour the wet ingredients into the dry mixture and stir gently with a spoon or spatula just until combined. Be careful not to overmix—the dough should be somewhat lumpy.
  5. Fold in Raisins:
    • If you’re using raisins, fold them into the batter gently.
  6. Scoop the Batter into Muffin Tin:
    • Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Bake the Muffins:
    • Bake in the preheated oven for 18-20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  8. Cool and Serve:
    • Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Serve warm with butter, jam, or enjoy them as they are!

Notes

  • If you don’t have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk. Let it sit for 5 minutes before using.
  • Raisins are optional, but they are a traditional addition to Irish soda bread. You can also try adding currants or chopped dried fruit for a different twist.
  • For a slightly richer muffin, you can substitute half-and-half or cream for the buttermilk, though the texture will be a little different.
