  • 2 large eggs

  • 3 ripe bananas, mashed
  • 1/2 cup sour cream or Greek yogurt (for extra moisture)
  • 1 cup chocolate chips (semi-sweet or milk chocolate)

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, salt, and ground cinnamon (if using). Set aside.
  • In a large bowl, whisk together the melted butter and sugar until smooth. Add the eggs and vanilla extract and whisk until combined.
  • Mash the ripe bananas in a separate bowl until smooth. Stir the mashed bananas and sour cream (or Greek yogurt) into the wet ingredients.
  • Gradually fold the dry ingredients into the wet ingredients using a spatula or wooden spoon until just combined. Be careful not to overmix the batter.
  • Gently fold in the chocolate chips, reserving a handful to sprinkle on top if desired.
  • Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the reserved chocolate chips on top for extra chocolate goodness. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached. If the top starts to brown too quickly, you can tent the loaf with aluminum foil for the last 15-20 minutes of baking.
  • Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes
