Instructions

  • Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats for easy cleanup.

  • Make the Cookie Dough:

    • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.

    • Add the egg and vanilla extract, mixing until well combined.

    • In a separate bowl, whisk together the flour, cinnamon, nutmeg, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until combined.

  • Add the Peach and Other Ingredients:

    • Gently fold in the chopped peaches, rolled oats, and nuts (if using) into the dough. The dough will be thick and slightly sticky.

  • Shape the Cookies:

    • Using a tablespoon or a cookie scoop, drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

    • If desired, gently press down the tops of the cookies with the back of a spoon for a slightly flatter cookie.

  • Bake the Cookies:

    • Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the cookies have set.
