Description

Italian Braised Green Beans and Potatoes is a rustic, comforting dish that combines tender potatoes and green beans braised in a flavorful garlic, tomato, and herb sauce. This dish is a perfect side, packed with Mediterranean flavors that are both simple and satisfying. It’s a great way to enjoy fresh vegetables, seasoned with olive oil, garlic, and a touch of Italian seasoning.

Ingredients

Scale
  • 1 lb (450g) green beans, trimmed
  • 4 medium potatoes, peeled and cut into cubes
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup vegetable broth or water
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Vegetables:
Wash and trim the green beans, cutting them into shorter pieces if desired. Peel and cut the potatoes into 1-inch cubes.
  2. Sauté the Aromatics:
Heat the olive oil in a large skillet or Dutch oven over medium heat. Add the chopped onion and garlic, and sauté for about 3-4 minutes until fragrant and softened.
  3. Add the Tomatoes and Spices:
Stir in the diced tomatoes (with their juices), vegetable broth (or water), oregano, basil, red pepper flakes (if using), salt, and pepper. Bring the mixture to a simmer and cook for 5-7 minutes to allow the flavors to develop.
  4. Braised the Potatoes and Green Beans:
Add the cubed potatoes and green beans to the skillet. Stir to combine, ensuring the vegetables are well-coated in the tomato mixture. Cover the pan, lower the heat, and simmer for about 25-30 minutes, or until the potatoes are tender and the green beans are cooked through, stirring occasionally. Add a little more broth or water if needed during the cooking process to prevent the vegetables from sticking to the pan.
  5. Finish and Serve:
Once the potatoes are tender and the green beans are fully cooked, taste and adjust the seasoning with more salt and pepper if needed. Garnish with fresh chopped parsley before serving.
  6. Serve:
Serve the Italian Braised Green Beans and Potatoes as a side dish or a light main course, paired with your favorite protein or crusty bread.
