- 1/4 cup roasted red peppers, sliced

- 1/4 cup provolone cheese, shredded
- 1/4 cup parmesan cheese, grated

Instructions
- In a large bowl, combine the shredded chicken, red onion, cucumber, cherry tomatoes, roasted red peppers, black olives, provolone cheese, and parmesan cheese.
- In a small bowl, whisk together the red wine vinegar, olive oil, oregano, basil, salt, and pepper until well combined.
- Pour the dressing over the chicken mixture and toss to coat evenly.
- Garnish with fresh parsley if desired. Serve immediately or refrigerate for later!
