Italian Grinder Chicken Salad is a fresh and hearty twist on the classic grinder sandwich! Tender chicken, crisp vegetables, and zesty Italian seasoning are tossed together for a flavorful salad that’s perfect for lunch or a light dinner.


Ingredients

  • 2 cups cooked chicken breast, shredded
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup roasted red peppers, sliced
  • 1/4 cup black olives, sliced
  • 1/4 cup provolone cheese, shredded
  • 1/4 cup parmesan cheese, grated
  • 1 tablespoon red wine vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. In a large bowl, combine the shredded chicken, red onion, cucumber, cherry tomatoes, roasted red peppers, black olives, provolone cheese, and parmesan cheese.
  2. In a small bowl, whisk together the red wine vinegar, olive oil, oregano, basil, salt, and pepper until well combined.
  3. Pour the dressing over the chicken mixture and toss to coat evenly.
  4. Garnish with fresh parsley if desired. Serve immediately or refrigerate for later!
