Ingredients
Scale
- 1 tablespoon olive oil
- 1 pound ground turkey (lean)
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, chopped
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (15 oz) can cannellini beans, drained and rinsed
- 4 cups low-sodium chicken broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional, for heat)
- Salt and black pepper, to taste
- 2 cups spinach, chopped (or kale)
- 1/2 cup small pasta (like ditalini, orzo, or elbow macaroni)
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the Ground Turkey: Heat the olive oil in a large pot over medium heat. Add the ground turkey and cook, breaking it apart with a spoon, until browned and cooked through (about 7-8 minutes).
- Sauté the Vegetables: Add the chopped onion, garlic, carrots, and celery to the pot. Cook for 5-7 minutes until the vegetables begin to soften.
- Add the Liquids and Seasonings: Stir in the diced tomatoes (with juices), cannellini beans, chicken broth, basil, oregano, red pepper flakes (if using), salt, and black pepper. Bring the soup to a simmer.
- Cook the Pasta: Add the pasta and cook for 8-10 minutes until al dente. Stir occasionally to prevent sticking.
- Add the Greens: Stir in the chopped spinach or kale and cook for an additional 3-4 minutes until the greens are wilted and tender.
- Serve: Taste and adjust seasoning if necessary. Ladle the soup into bowls and garnish with fresh parsley. Serve hot.
Notes
- You can substitute ground chicken or ground beef for the ground turkey if desired.
- For a gluten-free version, use gluten-free pasta or omit the pasta altogether.
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days. It also freezes well for up to 2 months.
- For extra flavor, top the soup with a sprinkle of Parmesan cheese before serving.
