These Italian-inspired marinated olives are a quick, flavorful appetizer, infused with garlic, lemon, and fresh herbs. Perfect for parties or as part of a Mediterranean spread!

- 1 (5.3 oz) jar Castelvetrano olives, drained
- 1 (5.3 oz) jar Kalamata olives, drained
- 1 cup extra virgin olive oil
- 5 cloves garlic, peeled and smashed
- 4 sprigs fresh rosemary
- 4 sprigs fresh thyme
- 6–8 black peppercorns
- 1/2 tsp red chili flakes
- 1/4 tsp kosher salt
- Zest of 1 lemon
Instructions
- Prepare the Flavored Oil:
- In a medium skillet, add olive oil, garlic, half of the rosemary and thyme, lemon zest, red chili flakes, and black peppercorns.
- Heat over medium heat for 3-4 minutes, swirling to infuse the flavors. The garlic should be fragrant, and the herbs should sizzle lightly. Remove from heat, season with salt, and set aside.
- Combine and Marinate:
- In a quart jar, layer the Castelvetrano and Kalamata olives with the cooked garlic, herbs, and any reserved fresh herbs.
- Pour the flavored oil over the olives, ensuring they’re well-covered. Cover the jar and refrigerate for at least 30 minutes to marinate (for best flavor, marinate up to 3 days).
- Serve:
- Remove from the refrigerator and let sit at room temperature before serving to allow the oil to liquefy. Serve as a snack or appetizer.
Notes
These marinated olives can be stored in the refrigerator for up to 2 weeks, but for best flavor, consume them within 3 days.
