  • Zest of 1 lemon
  • 2 tablespoons milk (for glazing)
  • 1 tablespoon lemon juice (for glazing)
  • ½ cup powdered sugar (for glazing)

Instructions

  • Preheat the oven to 375°F (190°C) and line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, and baking soda. Set aside.
  • In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and ricotta cheese.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  • Stir in the lemon zest for added flavor.
  • Drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are lightly golden but the centers remain soft.
  • Allow the cookies to cool on the baking sheets for a few minutes, then transfer them to wire racks to cool completely.
  • In a small bowl, whisk together the powdered sugar, lemon juice, and milk to make the glaze. Drizzle the glaze over the cooled cookies.
