For the Bread Dough:

  • 4 cups all-purpose flour

  • 1 cup whole milk, warmed

  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Step 1: Prepare the Dough
    In a small bowl, combine the warm milk, yeast, and 1 tablespoon of sugar. Let sit for 5-10 minutes until foamy.
    In a large mixing bowl, combine the flour, remaining sugar, salt, and cinnamon (if using).
    Add the ricotta cheese, melted butter, eggs, and the yeast mixture. Stir to combine.
    Knead the dough on a floured surface for about 8-10 minutes, or until smooth and elastic.
    Form the dough into a ball, place it in a lightly greased bowl, and cover with a damp towel. Let rise in a warm place for about 1-1.5 hours, or until doubled in size.

    Step 2: Shape the Bread
    Once the dough has risen, punch it down and divide it into 3 equal pieces.
    Roll each piece into a long rope (about 18-20 inches long).
    Braid the three ropes together to form a loaf. If using, nestle the dyed Easter eggs into the braids.
    Place the braided loaf on a parchment-lined baking sheet.

    Step 3: Let the Bread Rise
    Cover the braided dough with a towel and let it rise for another 30 minutes to 1 hour, until puffy.

    Step 4: Bake the Bread
    Preheat the oven to 350°F (175°C).
    Brush the dough with a beaten egg for a golden finish.
    Bake for 30-35 minutes, or until the bread is golden brown on top and sounds hollow when tapped on the bottom.

    Step 5: Cool and Decorate
    Allow the bread to cool on a wire rack.
    If desired, sprinkle with colorful sugar or sprinkles.
