Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
- Cook the Sausage: While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the Italian sausage, breaking it apart with a spoon, and cook until browned and fully cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.
- Sauté the Veggies: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced mushrooms and sauté for 3-4 minutes until softened. Add the chopped spinach and cook for another 2-3 minutes until wilted.
