Instructions

  • Prepare the Crust:
    • In a medium bowl, combine the graham cracker crumbs and melted butter until well mixed.
    • Press the mixture into the bottom of a 9-inch springform pan to form the crust.
    • Refrigerate while preparing the filling.
  • Make the Filling:
    • In a large mixing bowl, beat the cream cheese, mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy.
    • In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cheese mixture until fully combined.
  • Add Espresso Mixture:
    • In a small bowl, mix the cooled espresso with the coffee liqueur (if using).
    • Brush this mixture lightly over the graham cracker crust.
  • Assemble the Cheesecake:
    • Pour half of the cheese mixture over the crust, smoothing the top with a spatula.
    • Dust with a light layer of cocoa powder.
    • Repeat with the remaining cheese mixture, smoothing the top again.
    • Dust the top with another layer of cocoa powder.
  • Chill and Garnish:
    • Refrigerate the cheesecake for at least 4 hours, or until set.
    • Before serving, garnish with dark chocolate shavings.
