- ½ teaspoon paprika

- 2 large eggs
- 4 ounces light beer (or fizzy seltzer or clear soda)
- 2 to 3 cups peanut or vegetable oil (enough to cover the battered jalapeño peppers)
Instructions
- Heat the Oil: In a large pan, heat the oil to medium heat. Do not let it boil.
- Prepare the Batter: In a large mixing bowl, combine flour, garlic powder, paprika, and salt and pepper. Mix well.
- Add Eggs: Add the eggs to the flour mixture and beat to create a batter.
- Incorporate the Liquid: Stir in the beer (or fizzy soda) until well combined.
- Coat Jalapeños: In batches, coat the sliced jalapeño peppers in the batter.
- Fry the Peppers: Fry the battered jalapeño peppers in batches for about 5-6 minutes each, turning as needed, until golden and crispy.
- Drain and Serve: Drain on paper towels and lightly salt while they’re hot. Serve immediately.
Notes
- For a milder flavor, remove the seeds from the jalapeños before slicing.
