Description

These Jalapeño Cheddar Biscuits are a delightful blend of spicy jalapeños and sharp cheddar cheese, baked to golden perfection. Flaky and buttery, they make for the perfect side dish or snack, bursting with flavor in every bite.


Ingredients

  • 2 tablespoons baking powder

  • 2 fresh jalapeños, minced

  • 2 eggs
  • ⅔ cup buttermilk

Instructions

  • Preheat the oven: Preheat your oven to 425°F (220°C) and place a cast iron skillet in the oven to preheat as well.
  • Prepare the dry ingredients: In a large mixing bowl, combine the flour, baking powder, salt, and black pepper. Add the cold butter and pinch it into the flour mixture using your hands until the texture resembles coarse crumbs.
  • Mix the wet ingredients: In a separate bowl, whisk together the eggs and buttermilk until frothy. Add the grated cheddar cheese and minced jalapeños to the egg mixture, and stir to combine.
  • Form the dough: Make a well in the center of the dry ingredients and pour in the egg and buttermilk mixture. Use a fork or two knives to gently cut the mixture together until just combined.
  • Shape the dough: Turn the dough onto a floured surface and gently press it flat. Fold the dough like an envelope (horizontally, then vertically), repeating this 2-3 times to create layers. Roll the dough out to about 1 ½ inch thickness.
  • Cut and arrange biscuits: Use a biscuit cutter to cut out about 12 biscuits. Arrange the biscuits in the preheated cast iron skillet. Brush the tops of the biscuits with a little buttermilk, and place a slice of jalapeño on each biscuit if desired.
  • Bake the biscuits: Bake in the preheated oven for 20-25 minutes, or until the biscuits are golden brown.
  • Finishing touch: After removing from the oven, brush the tops with melted butter and sprinkle with flaky sea salt.
