Description

These Jalapeño Cornbread Poppers are a delicious and fun twist on traditional cornbread, packed with cheesy goodness and just the right amount of heat from fresh jalapeños. Perfect as a snack, appetizer, or side dish!


Ingredients

  • 12 Jalapeño Peppers
  • 1 box (15 oz) Cornbread Mix
  • 1 1/2 cups Shredded Cheddar Cheese
  • 1 cup Canned Corn

Instructions

  • Preheat the oven to 350°F (180°C).
  • Slice each jalapeño pepper down the center and carefully remove all of the seeds and veins. Set aside.
  • In a medium bowl, mix the cornbread mix according to the box instructions, then add in the canned corn and shredded cheddar cheese.
  • Fill each pepper with the batter, being careful not to overfill.
  • Sprinkle the remaining cheese on top.
  • Place the peppers on a baking sheet and bake for 15-20 minutes, or until the cornbread is firm and cooked through. They will be puffed and cheesy!
  • Let cool and enjoy!

Notes

These poppers are best served warm. You can also add spices or herbs to the cornbread mix for added flavor.
