Description

These Jalapeño Cream Cheese Buffalo Chicken Taquitos are the perfect combination of spicy buffalo sauce, creamy cheese, and crispy tortillas. With a kick from pickled jalapeños and the rich, savory filling, these taquitos are a crowd-pleasing appetizer or meal that’s ready in under 40 minutes.

Ingredients

Scale
  • 1 lb cooked chicken, shredded
  • 1/4 cup buffalo sauce
  • 4 oz cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup pickled jalapeños, chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 810 small flour tortillas
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • Olive oil spray or brush

Instructions

  • Preheat Oven: Set your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Mix Chicken Filling: In a large mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, sour cream, chopped jalapeños, garlic powder, onion powder, smoked paprika, ground cumin, and salt. Stir until well mixed.
  • Assemble Taquitos: Lay out a tortilla and add about 2-3 tablespoons of the chicken mixture down the center. Sprinkle a bit of cheddar and mozzarella cheese on top of the chicken filling. Roll the tortilla tightly around the filling and place seam-side down on the prepared baking sheet. Repeat with the remaining tortillas.
  • Bake: Lightly spray or brush the rolled taquitos with olive oil. Bake in the preheated oven for 15-20 minutes, or until the taquitos are golden and crispy.
  • Serve: Serve the taquitos warm with your favorite dipping sauce like ranch or additional buffalo sauce.

Notes

  • These taquitos are best served warm with ranch or blue cheese dressing to balance out the heat from the buffalo sauce and jalapeños.
  • You can make these ahead of time by assembling the taquitos and refrigerating them for up to 24 hours before baking.
  • If you want a spicier kick, add extra chopped jalapeños or a dash of hot sauce.
