- 1/2 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 8–10 small flour tortillas
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- Olive oil spray or brush
Instructions
- Preheat Oven: Set your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Mix Chicken Filling: In a large mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, sour cream, chopped jalapeños, garlic powder, onion powder, smoked paprika, ground cumin, and salt. Stir until well mixed.
- Assemble Taquitos: Lay out a tortilla and add about 2-3 tablespoons of the chicken mixture down the center. Sprinkle a bit of cheddar and mozzarella cheese on top of the chicken filling. Roll the tortilla tightly around the filling and place seam-side down on the prepared baking sheet. Repeat with the remaining tortillas.
