For the Crispy Fried Chicken:

  • 1 lb chicken breasts or thighs, boneless and skinless (about ½ inch thick)
  • ¾ cup buttermilk
  • 1 large egg
  • 1 tbsp Cajun seasoning
  • 1 cup flour
  • 1 tbsp Cajun seasoning
  • 2 tbsp cornstarch
  • 1 tsp baking powder
  • 4 cups vegetable or peanut oil (for frying)

For the Sandwiches:

  • 4 buns, optionally toasted
  • 6 tbsp jalapeno honey
  • 4 tbsp mayonnaise

Instructions

  1. Marinate the Chicken:
    In a bowl, combine the buttermilk, egg, and 1 tablespoon of Cajun seasoning. Marinate the chicken in this mixture for 1 hour or overnight.
  2. Prepare the Breading:
    In a separate bowl, mix flour, 1 tablespoon Cajun seasoning, cornstarch, and baking powder. Shake off the excess marinade from each piece of chicken, dredge in the flour mixture, and place on a wire rack. Repeat for all pieces.
  3. Fry the Chicken:
    Heat oil in a large pot to 350°F (180°C). Fry each piece of chicken until golden brown, about 4-5 minutes per side. Remove and place on a wire rack to cool. (Optional: Keep cooked chicken warm in a preheated oven at 300°F (150°C) until all pieces are fried.)
  4. Assemble the Sandwiches:
    Spread 1 tablespoon of mayonnaise on each bun, add a piece of fried chicken, and drizzle with 1½ tablespoons of jalapeno honey. Place the top bun on and enjoy!

Optional: For extra crispy chicken, dip it in the buttermilk mixture a second time and dredge again before frying.
